We have informed our staff about the upcoming week(s), we’ve donated all remaining food to the charity “Wiener Gruft” and closed the doors to our lovely restaurant to protect ourselves as well as our guests.  The Guesthouse Team and family always sticks together when times get tough, so be assured, NO member of staff WILL BE DISMISSED from their jobs. Das Wiener Schnitzel - Eine Liebesgeschichte

Sachertorte, Apfelstrudel, Kaiserschmarrn, Schweinsbraten, Semmelknödel, Tafelspitz und Leberknödelsuppe. Die österreichische Küche hat traditionellerweise ja nicht wenige Schmankerl anzubieten, aber …

...wohl kaum ein Gericht hat sich im einheimischen Speisen-Olymp so sehr behauptet wie das Wiener Schnitzel (das sich übrigens nur so nennen darf, wenn es mit Kalbfleisch gemacht ist). Wenn man so will, ist es wahrlich der Zeus unter den Speisen. Na gut, vielleicht ist so ein Vergleich ein bisschen übertrieben, aber kaum ein Fleischesser hierzulande wird bestreiten, dass dieses Schätzchen in der Panade ein geradezu königlicher Genuss ist. Und das trotz seiner Einfachheit!

Aber Schnitzel, sag, wie kam es eigentlich dazu, dass du bebröseltes Schnittchen so eine derartige Karriere gemacht hast?

Die Herkunft dieser üppigen Kreation ist nicht ganz gewiss. Man vermutet allerdings, dass die hohe Kunst, Speisen in wiederum noch mehr Speisen einzuhüllen, aus dem byzantinischen Raum stammt. Man darf aber davon ausgehen, dass die Anfänge dieser Praktik in der Notwendigkeit der „Restlverwertung“ ihren Ursprung haben und die Idee schon sehr alt ist. Wenn man heute von einer „goldbraunen“ Panier spricht, dann hat das übrigens auch möglicherweise den Grund, dass wohlhabende Gourmets im 15. und 16. Jahrhundert ihre Speisen tatsächlich gerne vergoldeten, sprich mit Blattgold überziehen ließen. Man glaubte nämlich, das sei furchtbar gesund.

Na? Schon hungrig geworden?

Den Begriff „Schnitzel“ verwendet man in Österreich seit langer Zeit. Schon Georg Andreas Böcklers schreibt in seinem Kochbuch „Nützliche Haus- und Feldschule“ anno 1683: „Wie man gute Kälberne Schnitzlein zurichten sollte, hat die Köchin hiervon zu wissen, dass dieses auch ein gutes Essen giebt, und nur in vornehmen Häusern einer hochberühmten Reichs-Stadt im Gebrauch…“.

Aber was macht denn jetzt eigentlich ein richtig gutes Schnitzel aus?

Wir vom Guesthouse überziehen unser original Wiener Schnitzel zwar nicht mit Blattgold, aber ansonsten sind wir dem perfekten Schnitzel dicht auf den Fersen. Beinahe jeder schafft es, ein einigermaßen passables Schnitzerl „rauszubraten“, aber um ein durch und durch makelloses Gericht hervorzubringen braucht es die Liebe zum Detail. Das Fett in dem sich unser Schnitzerl-Kind baden wird, um zu einem ganz Großen zu werden, muss von äußerst hoher Qualität sein. Hinzu kommt noch, genau den richtigen Zeitpunkt zu erwischen. Wenn man es nämlich zu früh in die Pfanne gibt, wird es, wie man auf gut österreichisch so schön sagt, "letschert". Beim gegenteiligen Fall wird die Panier wiederum zu braun. Wenn man das Fleisch zu dünn klopft, wird es schnell trocken … es gehört also einiges an Fingerspitzengefühl dazu, ein perfektes Schnitzel zuzubereiten.

Wir vom Guesthouse haben uns dieser herausfordernden Aufgabe aber mit Freude gestellt. Unser Wiener Schnitzel servieren wir übrigens mit Erdäpfel-Vogerlsalat und erlesenem Kürbiskernöl aus der Steiermark.
