We have informed our staff about the upcoming week(s), we’ve donated all remaining food to the charity “Wiener Gruft” and closed the doors to our lovely restaurant to protect ourselves as well as our guests.  The Guesthouse Team and family always sticks together when times get tough, so be assured, NO member of staff WILL BE DISMISSED from their jobs.  Here on Instagram we will keep you updated with the latest news and info, and share stories about our restaurant, the hotel as well as our staff. And of course, we will also tell you when we’re coming back! We are really looking forward to your visits again once life gets back on track. Küchengeflüster: Wordrap mit Zuckerbäckerin Andrea

 WE ARE FAMILY. Auf diesen Blogpost haben wir uns schon besonders gefreut! Unsere liebe Zuckerbäckerin Andrea gibt euch heute einen Einblick in ihren Arbeitsalltag. Tagtäglich umgibt sie sich mit den süßesten Kollegen: Zucker, Schokolade, Früchten, Caramel, Streusel,... ein Traum! Wir wollten von ihr wissen welche Talente man für den Beruf als Zuckerbäckerin mitbringen sollte und haben sie auch zu den Back-Trends der Zukunft interviewt! Viel Spaß beim Lesen & Andrea freut sich, euch bald in der Bakery mit ihren Kreationen verwöhnen zu dürfen.

🍩 Wie sieht für dich ein typischer Arbeitstag aus?

Ich starte zwischen 07.00 und 08.00 Uhr morgens, dann kontrolliere ich gleich das Gebäck und starte mit dem Aufbau der Süßigkeiten Vitrine. Von 09.00 bis 12.00 Uhr produziere ich dann weitere Süßigkeiten wie zum Beispiel aktuell: Zitronentartes, Brownies, Blechkuchen, Cheesecake, Tartelettes, Gugelhupf,... etc. Anschließend touriere* ich den Croissantteig in der Backstube der Bäckerei Gragger & Cie, forme danach die Croissants für den nächsten Morgen.

Ab 12.00 Uhr beginnt dann das Mittagsgeschäft also auch die Produktion der á la carte Desserts. Die letzte Stunde meines Arbeitstages - also ab 14.30 Uhr nutze ich um eine kleine Inventur zu machen damit ich weiß was alles da ist, putze meinen Arbeitsplatz, fülle nochmal die Vitrine auf und mache mich dann um 15.30 Uhr auf den Weg nach Hause.

*für alle die nicht wissen was "tourieren" bedeutet, wir mussten auch googeln: Tourieren oder Einziehen ist das schichtweise Einarbeiten von Ziehfett in einen Grundteig. Das Resultat des Vorgangs ist ein Ziehteig.

Mhmmmmm... wie es duftet wenn Andrea die frische Apfeltarte aus dem Ofen nimmt!

🍩 Wo holst du dir deine Inspiration und kannst du uns ein paar Back-Trends verraten?

Inspiration hole ich mir u.a bei Fréderic Bau - sein Kochbuchklassiker "Schokolade - Die Kochschule" wurde als das beste Schokoladenkochbuch ausgezeichnet. Ansonsten sehe ich mir viele YouTube Videos an und meine Mama hat auch immer gute Tipps auf Lager.

Die Molekularküche wird in Zukunft sicherlich noch weiter eine große Rolle spielen, aber "gesundes backen" wird auch ein immer größeres Thema. Viel mit Gemüse, glutenfrei arbeiten, mit Stevia süßen, etc. Mir macht es auch besonderen Spaß die alten Wiener Klassiker neu zu interpretieren.

🍩 Was magst du an deinem Job am liebsten? Welche Eigenschaften & Talente braucht man als Zuckerbäckerin?

Die Freiheit kreativ arbeiten zu können, neue Desserts & Kuchen zu kreiren, das Dekorieren der Torten & die künstlerische Arbeit meine á la carte Desserts zu gestalten. Feinmotork & Kreativität sollte man auf jeden Fall mitbringen. Und auch ein gewisses Maß an Disziplin - ich kann ja nicht die ganze Zeit meine eigenen Kuchen aufessen 😋

Der kreative Teil ihres Jobs macht Andrea besonders viel Spaß - und das kann sie auch besonders gut, wie wir finden!

🍩 Welche ist für dich die allerbeste Süßigkeit oder Mehlspeise der Welt?

Der klassische Gugelhupf - der geht einfach immer. Er ist auch bei uns ein absoluter Bestseller in der Bakery obwohl so viele andere, teilweise viel aufwendigere Sachen in der Vitrine stehen. Mein derzeitiger Favorit sind auch Pistazien-Mango-Kardamom Donuts - weil mir einfach alles schmeckt wo Pistazie drin ist.

🍩 Welche Zutat magst du persönlich überhaupt nicht?

Kaffee! Also ich trinke ihn gerne, aber in Desserts oder Süßigkeiten mag ich ihn gar nicht. Zuviel nach Alkohol sollten die Sachen auch nicht schmecken und gerade in Pralinen oder so ist der ja doch recht dominant manchmal.

🍩 An einem freien Wochenende findet man dich...

...meistens im Bett oder auf der Couch. Hauptsache gemütlich 🤗. Mittags gehe ich gerne essen, danach vielleicht ein bisschen spazieren. Aber die meiste Zeit wird gechillt und abends ein Film oder eine Serie geschaut.
